Coconut water: extraction and filtration
Coconut is perforated and positioned to recover water. The extracted coconut water is sent to the filtration system to remove the shell fragments produced during the perforation process. The product is extremely sensitive and should be immediately cooled to 2-4 ° C to avoid microbial and chemical changes.
Coconut milk: chopped nuts and cream extraction
The nuts are shelled, peeled, and then sent to the chopper to ensure that the particles are very fine. The chopped kernels are sent to a spiral extractor where coconut cream is extracted.
Pasteurization, separation and cooling
Coconut milk and coconut water are pasteurized and treated by high-speed separator to remove suspended solids and standardize products. The product is then collected in the insulation mixing tank to ensure the continuous operation of the next part. The same pasteurizer, separator and cooler can be used to treat milk, water and cream.
Coconut water: concentration
In order to concentrate coconut water, the evaporator is used, and the rising membrane evaporator ensures the minimum retention time and temperature, so it has better sensory characteristics.
Sterilization and filling
Coconut milk and coconut water (whether single concentration or concentrated) can be sterilized or pasteurized through plate heat exchanger. If there is food-grade steam, it can also be sterilized or sterilized through the direct heating injection system completed by tubular heat exchanger.
Coconut butter can be treated with the same process technology, the only exception is that indirect heat treatment can only be carried out through tubular heat exchanger.
Finally, coconut milk is usually homogenized before aseptic filling to avoid phase separation of water and fat during storage.
Once sterilized, products can be put in sterile bags, barrels or boxes, thanks to our sterile filling machine.
