Generally speaking, all dry components are weighed, while liquid components can be weighed or proportioned by a volume meter.
Pasteurization of ice cream processing line:
The ice cream mixture flows into the balance tank through the filter, and then is pumped from the balance tank to the plate heat exchanger. It is preheated to 73 - 75 ° C in the plate heat exchanger and homogenized at 140 - 200 bar. The mixture is sterilized at 83 - 85 ° C for about 15 seconds, then cooled to 5 ° C and transferred to the aging tank.
Aging of ice cream processing line
The mixture must be aged at a temperature of 2 to 5 ° C for at least 4 hours with continuous gentle stirring. Aging gives the stabilizer time to play its role and crystallize the fat.
