Cream with low fat content (10-18%) is commonly referred to as coffee cream; It is increasingly used in desserts and cooking. Cream with a high fat content (usually 35-40%) is usually thicker. Principle of cream processing line

The untreated milk from the storage tank is regenerated and heated in a heat exchanger to a separation temperature of 62 - 64 ºC. Then, the milk flows into the separator to separate the skimmed milk and cream, whose fat content is usually 35-40%. Low fat cream is mixed with skim milk to obtain the desired fat content. The cream is homogeneous.

The mixing of cream and skim milk is completed by the metering pump, which injects skim milk into the cream pipeline. The cream temperature is then adjusted to the homogenization temperature. The correct homogenization temperature and pressure must be selected so that the cream has the correct viscosity. The viscosity of cream increases with the increase of homogenization pressure and decreases with the increase of temperature. The cream viscosity can be obtained by maintaining the homogenization temperature at about 57 C and the homogenization pressure at 200 bar.
