Principle of condensed milk production line
Before evaporation, the fat and solid non fat values of milk have been normalized to predetermined values. Milk is also heat treated to destroy microorganisms and enzymes that may cause problems and stabilize protein complexes. Heat treatment is also important for the development of product viscosity during storage, especially for sweetened condensed milk. Adding sugar is a key step in manufacturing sweetened condensed milk, because the shelf life of the product depends on whether its osmotic pressure is high enough. A sugar content of at least 62.5% is required in the aqueous phase. Two methods are used to add sugar:
• add dry sugar before heat treatment
• add syrup to the evaporator
The stage of adding sugar affects the viscosity of the final product. Evaporators are usually multi-stage falling film type. When sugar is added to the evaporator, the syrup is sucked into the evaporator and mixed with milk in the middle of the process. Evaporation is then continued until the desired dry matter content is reached. The dry matter content was continuously checked by measuring the density of the concentrate.

The packing type of condensed milk
The condensed milk is in the state of liquid;commonly filling in Tin cans.
Sweetened condensed milk must be cooled after evaporation. This is the most critical and important stage in the whole process. The water in condensed milk can only contain half of the lactose in the solution. Therefore, the remaining half will precipitate in the form of crystals. If the excess lactose is allowed to precipitate freely, the sugar crystal will become large and the product will become coarse, which is not suitable for many applications. Therefore, it is preferable to control the crystallization of lactose so as to obtain very small crystals. The desired crystallization is accomplished by rapidly cooling the mixture under vigorous stirring without entraining air. The cooled condensed milk is pumped to the storage tank and stored in the storage tank until the next day to complete the crystallization process.
Sweetened condensed milk shall be light yellow and have the appearance of mayonnaise. Traditionally, it is packed in cans. In this case, the cans must be cleaned and disinfected before filling because there is no disinfection after filling. It is also possible to pack sweet condensed milk in sterile cardboard. The product is also packed in large barrels, with a capacity of about 300 kg, for large-scale users.
