New Small-Scale Automatic Mozzarella Cheese Making Machine Dairy ProcessingThe hogendorn family produces baby Gouda cheese in Wald. In order to achieve more production with less labor, hogendorn and C. van trelet dairy technology developed a new production line. The milk is pumped into a closed curd processor through a preheating device, through which the milk is heated to 29 degrees. The automatic curd processor displays the amount of ingredients required, which is calculated according to the starting amount of milk. When added, the automatic curd processor will continue this process until the curd is ready. After that, the curd whey mixture is transferred to an automatic drainage container, which will pre press the curd and cut it into pieces. Through additional pneumatic distribution blocks, the curd blocks are redirected to different holes in the micro perforated multi vortex tube. Then squeeze the cheese out with compressed air. The cheese will continue to enter the storage room through the salt bath, and the multi-functional cheese will be cleaned through the large CIP tank. These substances are dissolved in a chemical coagulant. The aging of baby Gouda cheese is carried out on plastic shelves to ensure good ventilation and easy cleaning.
