with similar characteristic, such as citrus, lemon, orange, pomelo, grapefruit etc.

deacidification, oil refiner, evaporation etc.

Oxygen, nitrogen and carbon dioxide in fruit cells will be dissolved in orange juice or attached to fruit particles during processing. In addition, the contact of juice and air during processing will increase the gas content. Oxygen destroys vitamin C. Their reaction with various components in the juice will destroy the flavor and color of the juice. Heating will reinforce these adverse effects. Therefore, before pasteurization, we need degassing to remove excess oxygen. Degassing technology includes vacuum method, nitrogen exchange method, enzyme method and antioxidant method.




Orange juice homogenization

Homogenization is another process for making cloudy orange juice, which is usually used for orange juice packaged in glass bottles. After passing through the homogenizer, the particles in the juice are further crushed and unified. Homogenization promotes the extrusion of pectin and makes it mix evenly with fruit juice. In this way, we can obtain turbid juice without separation or precipitation conditions.



High pressure homogenizer and colloid mill are common equipment in this process. In the high-pressure homogenizer, the suspended particles are crushed under high pressure. They are supplied by force through small holes with a diameter of 0.002-0.003. After that, they become finer particles and are evenly distributed in the orange juice.
