Pasteurization of orange juice

Pasteurization can eliminate spoilage microorganisms in orange juice and inactivate enzymes that may cause chemical changes. But heating may damage the quality of orange juice. Therefore, in order to achieve the sterilization effect and reduce its impact on the quality of fruit juice, it is necessary to control the heating temperature and time. Generally, high-temperature sterilization is adopted, 93 ºC± 2 ºC for 15-30s, and above 120 ºC for 3-10s.




Filling and cooling

Pasteurized orange juice (temperature about 85.degree. C.) is pumped into the charging basket and loaded into the tank. Orange juice should be kept in the charging basket for no more than 2 minutes to reduce flavor changes. After filling and sealing, put the orange juice can upside down for 20 minutes, and sterilize the lid with the high temperature of orange juice. Then, spray cold water to cool the orange juice tank and reduce the temperature to below 38 ºC. Excess heat helps dry the exterior and prevents rusting.
